Foeniculum vulgare - The perennial type grown for leaves and seeds, as opposed to Florence Fennel which is grown for bulbs. Hardy clump forming plants thrive with little care once they get established. Use the leaves in teas, seasoning, soups or fresh in salads. Tap the large yellow flowers into a dish and collect the pollen, which is a culinary delight (chefs love it as a finishing dust). The seeds are delicious in sauces and herbal tea, or nibbled out of hand. The whole plant has a sweet anise-like flavour. A host plant for several species of swallowtail butterfly. (0.5 g)
